Store-bought Homemade Chicken Salad

Costco has really good chicken salad that they make at their store.  It is about $5 a pound.  Of course Costco being Costco, you are buying at least 2 pounds of it.  Still it is very tasty.  Yesterday while perusing our local Costco, I saw their rotisserie chicken $5.

Costco uses its rotisserie chicken for its chicken salad, so you know what I was thinking….I buy the whole cooked chicken and make my own chicken salad!

With two cats to fight off, I spent about 15 minutes de-boning and skinning my 3 pound bird.  I only used the breast meat and parts of the thigh and wings for my chicken salad.  I got about 1 and 1/4 pounds of meat.  Once my wife added the salad ingredients, (her secret recipe) the chicken salad totaled about 1 3/4 pounds.  So the math says I got $8.75 worth of chicken salad for $5.  Sounds like an easy and economical way to get store-bought but homemade savings on food.
