Lemon Roll Cake

The request was for something “lemony”.  I have never made a jelly roll type cake before, so I was game.  I found a recipe in a Better Homes & Garden, and went to work. 

I learned that a sponge cake, has no added fat except for eggs.  So here we go.  I beat 3 eggs until they were fluffy, then I mixed in 1 cup of sugar, 1 tsp. of vanilla, 1/4 cup of water, 1 Tbl of lemon juice.  In a separate bowl I mixed together, 1 cup of cake flour, 1/4 tsp. of salt, and 1 tsp of baking powder.  I then gently stirred the flour mixture into the batter.  I then poured the batter onto a well greased pan that had a well greased piece of waxed paper on it.  The pan was about 10 1/2″x8″x 1/2″, the batter just fit.  Then into a 375 oven, for 12-15 minutes, or until a toothpick inserted into the center comes out clean; don’t overcook. 

Put some powdered sugar on a clean towel and when the cake comes out carefully put it on the towel.  I found this next part the trickiest: peel off the waxed paper from the cake.  You then roll the cake up with the towel and let it cool for at least 30 minutes;  this is when I went and watched some basketball! 

Meanwhile to make the filling:  Mix 3/4 cup of sugar, 1/4 tsp. of salt, 3 Tbls. of cornstartch in a saucepan.  Add 3/4 cup of water and stir to get the lumps out.  Bring to boil over the stove while stirring constantly.  Once it boils it will thicken, a lot.  The directions call for you to keep stirring for 5 minutes. (I turned the heat to low and stirred for about 3 minutes.)  You then take it off the heat and add: 1 Tbl of butter, 1 tsp of grated lemon peel, and 1/3 of a cup of lemon juice.  Let cool it cool; I went and watched some more basketball.

Now to put it together, carefully unroll the cooled cake and spread the filling over the cake then roll up and you are done!  Here’s a picture of mine.

I will tell you the filling tasted like the filling inside a lemon filled Krispy Kreme donut, mmmm good.  The texture of the sponge cake is a little different.  A little more chewy than a regular cake that has butter or shortening.  All in all, though, a tasty desert.  So…. if this economy is giving you lemons, you now know what you can make or I should say, bake.
