Last Minute Kabobs
Found that marinating meat in Italian dressing is a good way to do Kabobs on the grill. Yesterday I went to the store and found some east coast shrimp, I added some beef tips that were on sale and I was on my way to making a kabob. Usually we use chicken and steak with mushrooms, onions, peppers and pineapple.
Well when I got home with the shrimp, I realized we had no mushroom or peppers. Time to improvise…instead of mushrooms I cut up watermelon! I saw someone on the Today show, this past summer, grilling watermelon. So I tried it and it was pretty good. The watermelon was crisp and juicy, it was just a little weird that it was warm instead of cold like I am used to.
