Twice Baked Potatoes

It’s weird having to add a whole stick of butter to my potatoes, but knowing what I was making, I knew it was worth it.  This recipe was from the Angus Barn and it is delicious.

First you take 6 potatoes and bake them thoroughly.  I just use a microwave.  Then you cut them in half and scrape out the insides an put them into a bowl.  This is where the butter comes in.  I calculated the butter per potato would be only slightly more than one tablespoon.  Anyway you drop that stick of butter in the bowl, the hot potato guts will melt the butter as you mash it all together.  Then you add 2 tablespoons of crumble bacon, 1 tablespoon of sour cream, 2 tablespoons of chopped chives, 1 teaspoon of salt, 4 tablespoons of grated parmesan cheese, and pepper to taste.  Mix this all together and then scoop the mixture back into the skins and bake in a hot oven for about 4 minutes.

This is very good with a fresh salad and a fresh steak hot off the grill.
