Day Old Bread?

How come some food tastes better a day later?  The lasagna that I was inspired to cook because of our chilly weekend turned out fine for our Monday dinner.  However, I had more lasagna on Tuesday and it seemed richer and more flavorful.  I know bread tastes best when fresh out the oven, but I find some food tastes better the second time around.  Maybe the flavors get stronger or something.  By the way, I added a small amount of diced fresh spinach into the ragu, and that seemed to be a good way to get some nutritional spinach into the lasagna without the moisture from a package of frozen spinach ruining the dish.  I might try some more leftover lasagna today to see if the flavors get even stronger, I hope I don’t turn into a noodle.

ragu!!! As an Italian-American…I am appalled! Next time my husband makes homemade sauce and lasagna…I will bring you a slice.

I learned the term “ragu” while reading a book about Mario Batali, that term refers to the homemade sauce that Italians make when cooking. I used whole tomatoes, mushrooms, sausage, onions, garlic and spices for my ragu. I never would use a jar of Ragu! Take care.
