Smack Down Weekend

Friday we had a high of 81, today we stay in the 50s and tomorrow we stay in the 40s.  Now that is a smack down on spring.  I am going to get to wear my sweaters and sweatshirts again.  Maybe the Tarheel sweatshirt will be a nice fit for tonight.j0283903.gif  While I enjoyed the warmth of last week,  I do know that we are headed for hot weather before long so I enjoy this cool spell.

This weekend is not a cookout weekend but a casserole weekend.  I have been meaning to make my homemade lasagna for a while now and this break in the weather has inspired me to finally make it tomorrow on a chilly gray day.  I add spicy sausage and tomatoes to my lasagna.  One time I put frozen spinach in my lasagna but it made the dish watery, yuck.  This time I could put fresh spinach in there…but why take the chance, how about a spinach salad to go along with fresh homemade lasagna?                  Mmmmlasagna.jpg

We are making london broil at home today…it felt like winter today…how awful…it’s going to warm up soon…right???

Don’t you remember last August, 100 degree plus heat?! It will get warmer, but today is another cool day. The london broil sounds great, a good warm comfort food.
