Smack Down Weekend
Friday we had a high of 81, today we stay in the 50s and tomorrow we stay in the 40s. Now that is a smack down on spring. I am going to get to wear my sweaters and sweatshirts again. Maybe the Tarheel sweatshirt will be a nice fit for tonight.
While I enjoyed the warmth of last week, I do know that we are headed for hot weather before long so I enjoy this cool spell.
This weekend is not a cookout weekend but a casserole weekend. I have been meaning to make my homemade lasagna for a while now and this break in the weather has inspired me to finally make it tomorrow on a chilly gray day. I add spicy sausage and tomatoes to my lasagna. One time I put frozen spinach in my lasagna but it made the dish watery, yuck. This time I could put fresh spinach in there…but why take the chance, how about a spinach salad to go along with fresh homemade lasagna? Mmmm
